Zucchini clafoutis with mozzarella and oregano
- 3 zucchini
- 100 g of mozzarella
- 80g flour
- 2 eggs
- 20 cl whole milk
- 2 tbsp. fresh cream
- 2 tbsp. olive oil
- 30g butter
- 1 C. chopped parsley
- 1 clove of garlic
- 1 C. oregano
- salt pepper

Preheat the oven th.6 (180°C).
Clean the courgettes, cut off the ends and cut them into cubes.
In a large non-stick frying pan, heat the olive oil, add the zucchini cubes, the chopped garlic, the chopped parsley and fry everything for 5 to 6 minutes.

Salt, pepper and set aside.
Then take a large container and put the flour and a little salt in it.
Break and incorporate the eggs, whip the necessary time to obtain a smooth and homogeneous batter.
Then add in small doses the milk, then the fresh cream.
Cut the mozzarella into thin slices.
Then coat 4 small gratin dishes with butter.
Spread the zucchini cubes in each, then spread the dough over them.
Then put the slices of mozzarella and sprinkle with 1 tbsp. oregano.
Bake for approximately 30 mins.
Arrange sprigs of parsley on your clafoutis and serve immediately.
