Zucchini and sweet potato velouté
Ingredients :
- 500g zucchini
- 250g sweet potatoes
- 3 servings of The Laughing Cow®
- 1 L of chicken broth
- 2 tbsp. chopped parsley
- salt pepper

Clean and peel the courgettes. Cut them into slices.

Peel the sweet potatoes and cut them into large chunks.

Add the zucchini slices and sweet potato pieces to a casserole dish then pour in the chicken broth.

Cover the pot and place it over low heat. Bake for 30 minutes.

At the end of cooking, mix more or less the velouté of zucchini with sweet potatoes, using an immersion blender, until you obtain the consistency you want. Check the seasoning with salt and pepper then add the Laughing Cow portions. Mix again.

Serve the zucchini velouté with sweet potatoes hot in bowls or deep plates and sprinkle each serving with chopped parsley.
