white cabbage soup
White cabbage soup is a great classic: tasty, easy to prepare and ideal for a satisfying and quick meal. For an even more gourmet soup, plan grilled bacon and croutons, to serve.
Ingredients :
- 1 small white cabbage (or 1/2 large)
- 2 potatoes
- 1 onion
- 10 cl liquid full cream
- 2 tbsp. butter
- salt pepper

Prepare the potatoes by peeling them, washing them and cutting them into regular pieces. Peel the onion and roughly chop it. Wash the cabbage, after removing the first thick leaf. Remove the stem and cut it into strips.

Melt the butter in a casserole. When foamy, add the onion and sauté until translucent.

Then add the potatoes and cabbage. Stir and let color lightly for 3 to 4 minutes. Salt and pepper to your liking.

Cover with water and simmer for 30 minutes.

Mix everything with an immersion blender. Add the cream and mix again. Adjust the seasoning and serve.
Tips
The white cabbage soup can be garnished with grated cheese, just before serving, if desired.
