White cabbage fritters
- 250g of flour
- 2 whole eggs
- 3 egg whites
- 25 cl of beer
- 500g white cabbage
- 1 glass of vegetable broth
- 25g butter
- frying oil
- salt pepper

Clean the white cabbage and chop it finely.
Sift the flour into a bowl.
Dig a well in the center and add the egg yolks, then little by little the beer, stirring constantly until you obtain a homogeneous paste.
Whip the egg whites stiff and gently fold them into the batter. Salt, pepper and stir gently.

Melt the butter in a skillet.
Fry the shredded white cabbage for 5 minutes over low heat. Salt, pepper. Add the glass of vegetable broth and cook for several minutes, stirring regularly, until the cabbage is tender.

Heat the oil in your fryer.
When it is very hot, dip c. cabbage in the batter and then in the hot oil. Cook for a few minutes until golden brown.
At the end of cooking, remove the donuts from the fryer using a slotted spoon, and drain them on absorbent paper.
Serve hot with a lemony yoghurt sauce.
