Whelks in spiced broth
Ingredients :
- 1.25 kg of whelk
- 2 tbsp. tablespoon white wine vinegar
- 2 stalks of lemongrass
- 1 sprig of fennel
- 4 stalks of spring onion
- 4 cm ginger root
- White pepper
- Espelette pepper powder
- Cayenne pepper
- coarse salt

Let the whelks drain with 2 tbsp. coarse salt and vinegar for 30 min.

Rinse them several times with plenty of water, drain them and cook them in a Dutch oven filled with cold water with the lemongrass split in half lengthwise, the fennel, the spring onions (or 2 gray shallots), the ginger cut into pieces, 1 tbsp. white pepper, 4 pinches of Cayenne, 1 pinch of Espelette and salt.

Bring to the boil then let simmer for 20 minutes. Let cool in the broth, drain.

Serve whourswith spicy mayonnaise or aioli.
