West Indian clams
Ingredients :
- 60 clams
- 1 hot red pepper
- 2 spring onions
- 125g fine breadcrumbs
- 1 onion
- 1 bay leaf
- 15 cl of white wine
- 3 tbsp. olive oil
- coarse salt
- pepper
Preparation :

Peel, chop the spring onions and the chilli and mix them in a bowl with the breadcrumbs.

Clean the clams.

Peel and finely chop the onion.

Heat 1 tbsp. tablespoons of olive oil in a pot, brown the onion then add the clams and the bay leaf. Season with salt and pepper, pour in the wine and cover. Cook until the clams are open.

Fill a large baking dish with coarse salt.

Remove the clams from the pot with a slotted spoon and remove the top part of the shells.

Then place the shellfish in the dish, distribute the breadcrumbs/spring onion/chili mixture in the shells. Drizzle each clam with a drizzle of olive oil. Bake and broil for 5 minutes.

Serve right out of the oven.
