Vercors ice cream with Thermomix
This is ice cream like no other. Served in slices, topped with caramel, garnished with meringue chips and chopped walnuts, Vercors ice cream with Thermomix is a specialty that goes off the beaten track… or rather, frozen! No need for an ice cream maker, its creamy and slightly vanilla-flavoured preparation is made in a food processor before setting in cake molds like a semifreddo, in the freezer… where it can be kept for several months. An easy recipe for a stunning result!
Ingredients :
- 250 g Whole cream
- 25 g sugar
- 15 g Icing sugar
- 7.5 g Vanilla sugar
- 2 egg
- 30g Walnuts
- 1 Meringue
- liquid caramel
- Salt

Separate the egg whites from the yolks and pour the yolks into the Thermomix bowl (reserve the whites). Insert the whisk, add the sugars and run 3 mins at speed 3. Transfer to a bowl and set aside.

Wash and dry the bowl, replace the whisk and add the egg whites with a pinch of salt. Program 5 min at 37°C at speed 4. Add 5g of icing sugar 2 min before the end. Gently fold the egg whites into the egg yolk mixture in the bowl, using a spatula.

Clean the bowl with cold water, dry it and replace it with the whisk. Pour in the very cold whole cream and run for 4 mins at speed 1, increasing gradually to reach speed 4 after 1 min. At 3 min, when the cream has the consistency of whipped cream, add the rest of the icing sugar. Gently fold this whipped cream into the mixture in the bowl, using a spatula.

Cover the bottom of a silicone cake tin or one lined with baking paper with a layer of liquid caramel. Cover with cream, then place a layer of broken meringue and crushed walnuts. Add a layer of caramel and finish with the remaining cream. Place in the freezer for the night.

Take the ice cream out 10 minutes before serving, unmold and cut into slices. Drizzle with caramel and sprinkle with nuts.
Tips
You can use either a large meringue or several small ones for the Vercors ice cream with the Thermomix, as long as they are crunchy and not soft. Do not hesitate to cook them yourself if you have the time, as well as for the caramel which can be homemade with the Thermomix. Place a sufficiently generous layer at the bottom of the mold to facilitate unmolding. You can also line the walls if you wish!
