Vegetarian quinoa, sweet potato, chickpea and kale salad
Ingredients :
- 100g quinoa
- 100 g canned chickpeas
- 4 kale leaves
- 1 sweet potato
- ½ tsp. tablespoon herbs of Provence
- 3 tbsp. olive oil
- 1 C. tamari soup
- 1 C. honey
- 1 C. balsamic vinegar
- 1 C. mustard
- Salt pepper

Preheat the oven to 200°C.

Peel the sweet potato and cut it into cubes. Rinse the chickpeas and drain them. Place the whole thing on a baking sheet lined with baking paper.

Sprinkle with 2 tbsp. tablespoon oil, tamari and Provencal herbs. Salt, pepper, and mix well. Bake for about 40 minutes, stirring twice.

Meanwhile, rinse the cabbage leaves and remove the central rib. Cut them into strips and massage them in a bowl with 1 tbsp. oil to soften them.

Rinse the quinoa thoroughly, then cook it in a pot of salted water, according to the packet instructions. Drain and let cool.

In a bowl, mix the remaining tablespoon of oil with the mustard, honey and vinegar.

Mix quinoa with dressing and cabbage. Add the diced sweet potato and chickpeas. Serve.
