Vegan and healthy avocado burger
A vegan version burger to change vegetable patties. The fondant avocado goes wonderfully with the crispy toasted burger bun and the crunchy raw vegetables that accompany it. All seasoned with an orange vinaigrette. This plate contains everything you need for a complete meal thanks to the good lipids of avocado and olives, the good carbohydrates provided by the whole wheat burger bun, proteins present in lupine, baby spinach and alfalfa, as well as fibre, vitamins and minerals found in vegetables.
Ingredients :
- 1/2 Avocado
- 1 whole wheat burger bun
- 1 C. ketchup
- 1 grated carrot
- 3 iceberg lettuce leaves
- 1/2 red onion
- 20g roasted peppers
- 5 green olives
- 1 C. tablespoon lupine seeds
- 1 C. tablespoons olive oil
- 1/2 Orange
- 1 C. Agave syrup
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- 1/2 tsp. Coriander
- 20g baby spinach
- 1 C. Alfalfa soup
- 1 C. tablespoons Raisins

Start by peeling the carrot, grate it using hoursndolin. Remove the skin from half the red onion, cut it into thin rings. Book. Prepare the vinaigrette by squeezing the juice of half an orange, add the olive oil, raisins, agave syrup, coriander, salt and pepper. Mix and reserve.

Remove the skin from half an avocado and cut it in half lengthwise. Book. Toast the burger bun in the toaster or in the grill function oven for 3 minutes. Book. Proceed to dress the plate by placing the grated carrot, the lettuce leaves, the baby spinach, the olives, the lupine seeds, the alfalfa, the grilled peppers, taking care to keep a little grilled pepper and grated carrot to garnish the burger.

Drizzle with orange vinaigrette. Spread the ketchup on both sides of the burger bun. Proceed with the assembly, alternating the lettuce, a slice of avocado, rings of red onion, grated carrot, grilled pepper, repeat a second time. Cover with the top of the burger bun.
