Sweet Burger
Ingredients :
- For the brioche bread:
- 250g of flour
- 35g sugar
- 10 cl lukewhoursmilk
- 1 whole egg + 1 egg yolk
- 60g soft butter
- 1 sachet of baker’s yeast
- 1 pinch of salt
- A few sugar pearls
- For the raspberry gelatin:
- 150g raspberry coulis
- 5 sheets of gelatin
- For the orange gelatin:
- 50 cl orange juice without pulp
- 10 sheets of gelatin
- 150g sugar
- For the chocolate pastry cream:
- 1/2 liter of milk
- 25 g cornstarch
- 25g flour
- 3 egg yolks
- 140g sugar
- 150g dark chocolate
- 1 vanilla pod
- For garnish :
- A few raspberries (about 8 per burger)

For the brioche bread:

Before you begin, pour your baker’s yeast into the lukewhoursmilk and mix a little to allow the yeast to dissolve properly.

In a large bowl, place your flour, sugar, butter, egg, and mix with a wooden spoon to start, then with your hands to work the dough well. Add the lukewhoursmilk/baker’s yeast mixture to the preparation then knead the dough again to obtain a nice homogeneous ball.

When it no longer sticks to your finger, you can move on to kneading, brushing the work surface with a little flour. You can also use a food processor.

When the dough is homogeneous, put it back in a bowl and cover it in cling film. Leave the dough to rest at room temperature for at least 1 hour 30 minutes.

After the rest time, collect the dough, remove it to a flowered work surface and work it a little by hand to release all the gas.

Divide the dough into a ball of about 70 g, you normally get 6 balls. Let them rest again for 1 hour at room temperature.

After the resting time, preheat your oven to 200°.

Brush the top of your dough pieces with your egg yolk to obtain a nice golden colour, then sprinkle with your pearls of sugar.

Bake your buns for 15 minutes, watching the coloring carefully.

For the pastry cream:

To start, split your vanilla pod and collect all the grains using the tip of a knife. Put the pod and grains with your milk in a saucepan and bring everything to a boil.

Meanwhile, in a bowl, blanch your eggs with the sugar, whisking vigorously for 3 minutes. Add the cornstarch and flour, continuing to whisk until well incorporated.

When your milk is boiling, remove the vanilla pod and place your chocolate. Mix for a few minutes, until your chocolate is melted. When it’s ready, add the chocolate milk to your egg preparation, mix until the mixture is homogeneous and then return everything to the saucepan over low heat. Continue mixing with a spoon until the mixture has a nice creamy texture and coats the spoon well.

When the cream is finished, film it in contact and place it in the refrigerator until use.

When your buns are baking, you can take the cream out of the fridge and loosen it a little with a whisk. Then place it in a piping bag.

For the raspberry jelly:

To start, place your gelatin sheets in a glass of cold water to soften them.

In a saucepan, pour your raspberry coulis and bring it to a boil. If you want more quantity, you can add up to 6 cl of water. When the coulis boils, remove the pan from the heat and add your previously drained gelatin sheets and stir until the gelatin is dissolved.

When the gelatin is ready, pour it into a dish and place it in the freezer until the jelly is well set.

When it is set, cut it out using a round cookie cutter, this gelatin will be used to make the tomatoes.

For the orange jelly:

To start, place your gelatin sheets in a glass of cold water to soften them.

In a saucepan, pour your orange juice and sugar and bring to a boil. When the juice boils, remove the pan from the heat and add your previously drained gelatin sheets and stir until the gelatin is dissolved.

When the gelatin is ready, pour it into a large, thin dish, such as a dripping pan, and place it in the freezer until the jelly is well set.
