Strawberry with Thermomix
A breathtaking dessert for a fruity end to hoursal with your friends or family. A traditional French pastry recipe consisting of a sponge cake, mousseline cream, strawberries and covered with a strawberry mirror. Simplify your life by preparing it with your Thermomix robot.
Ingredients :
- For the sponge cake:
- 4 eggs
- 120g caster sugar
- 70g cornstarch
- 30g flour
- 1 packet of baking powder
- For the mousseline cream:
- 400ml milk
- 60g flour
- 2 whole eggs
- 2 egg yolks
- 70g caster sugar
- 150 g soft butter
- For the syrup:
- 100ml water
- 125g caster sugar
- 20g strawberry liqueur
- For the garnish and decoration:
- 500g strawberries
- For the strawberry mirror:
- 120g strawberries
- 90g caster sugar
- 2 sheets of gelatin

The sponge cake: Insert the whisk into the bowl of the Thermomix, add the eggs and sugar then program 15 min at 37°C at speed 3. Then add the flour, cornflour and baking powder and program 1 min at speed 1. Pour the preparation on a baking sheet covered with parchment paper then bake in a hot oven at 170°C for 20 min. Unmold and let cool on a wire rack.

Mousseline cream: Put the milk, flour, whole eggs, egg yolks and powdered sugar in the Thermomix bowl and program 7 min at 90°C at speed 4 then mix 5 sec at speed 9. Insert the whisk in the bowl and add the butter cut into pieces then program 2 mins at speed 4. Pour the preparation into a bowl, cover with cling film and leave to cool.

The syrup: In the bowl of the Thermomix, put the water and powdered sugar and program 3 min at 70°C at speed 4. Pour the preparation into a bowl and add the strawberry liqueur.

Assembling the strawberry: Place rhodoïd paper all around your pastry ring. Cut the sponge cake in half. Place the first half of the sponge cake in the pastry circle, soak it with the syrup using a brush. Place strawberries cut in half all around the circle. Place strawberry quarters on the first sponge cake and cover with some of the mousseline cream. Arrange strawberries in quarters on top then add mousseline cream. Soak the second sponge cake with strawberry syrup. Arrange it in the circle, on the cream. Spread the rest of the mousseline cream with a spatula. Chill for 1 hour.

The strawberry mirror: put the gelatin to soften in a bowl of cold water. In the bowl of the Thermomix, blend the strawberries for 10 sec at speed 8 and strain. In a saucepan, heat the strawberry coulis and the sugar. At the first simmer, add the gelatin. Mix and pour into a bowl and let cool. Take the strawberry out of the fridge and pour the mirror on top and place in the fridge for 1 hour.

Carefully remove the pastry circle and the rhodoïd paper. Place your strawberry in a presentation dish and serve.
Tips
Decorate your strawberry plant as you wish, with strawberries cut into pieces, with mint leaves or chocolate shavings. You can also cover it with marzipan to replace the strawberry mirror.
