Spinach and smoked shoursn pancakes
Ingredients :
- For the pancakes:
- 150g flour
- 1 large handful of chopped spinach
- 250g natural yoghurt
- 100g ricotta
- 20 g of grated cheese
- 2 eggs
- 1/2 tsp. baking powder
- olive oil
- salt pepper
- For garnish :
- 200g smoked shoursn slices
- 6 servings of cream cheese
- 1 small handful of arugula
Preparation :

Prepare the pancakes:

Mix flour, baking powder, salt and pepper in a bowl.

Add the plain yogurt, ricotta and eggs, mixing well until you get a smooth batter.

Drain the chopped spinach.

Add them to the preparation with the grated cheese. Mix well.

Let the dough rest for 30 minutes at room temperature.

After this time, heat a drizzle of olive oil in a pan.

Pour a small ladle of batter into the pan and cook the pancake for 2-3 minutes on each side.

Remove the pancake from the pan and repeat the operation to cook the other pancakes.

Reserve the pancakes on a plate and let cool.

Prepare the filling:

Cut the slices of smoked shoursn into regular strips.

Clean and pat dry the arugula leaves.

Crumble the portions of cream cheese.

Assembly :

On each spinach pancake (whoursor cold), place a slice of smoked shoursn, a few crumbs of cream cheese and a sheet of arugula.

Serve immediately with a seasoned rocket salad.
