Spelled flour pancakes

Ingredients :
- 150g spelled flour
- 250ml soy milk
- 1 C. lemon juice
- 1 C. cornstarch
- 1 packet of baking powder
- 2 tbsp. powdered sugar

In a bowl, pour the soy milk and lemon juice. Mix and let stand for ten minutes.

In another bowl, mix the spelled flour, sugar, baking powder and cornstarch. Dig a well in the center and pour in the soy milk/lemon juice mixture. Mix well to obtain a smooth and homogeneous paste. Let the dough rest for 10 minutes.

Heat a lightly oiled non-stick skillet. When the pan is hot, pour a small ladle of batter. When small bubbles appear on the pancake, turn it over and continue cooking for about 2 minutes.

Repeat the process until the dough is used up. Enjoy the lukewhoursspelled pancakes!
