Shrimp burger with celery
- 400g raw peeled prawns
- 1/2 celeriac
- 1/2 lemon
- 1 fennel bulb
- 1 C. chives
- 2 tbsp. chopped dill
- 1 egg white
- 4 poppy seed buns
- 1 C. tablespoon white wine vinegar
- 1 C. mustard
- 1 C. honey
- salt pepper

Rinse, drain and coarsely chop the prawns then mix them with the lightly beaten egg white.
Season with half the dill, salt, pepper and form 4 hamburgers.
Prepare the sauce with the mustard, honey, vinegar and remaining dill then add 2 tbsp. oil soup.
Slice the fennel, mix it with the chives, 1 tbsp. tablespoon lemon juice, salt and pepper.
Peel the celery and cut it into thin slices. Heat the oil in a fryer and fry the celery slices in batches if necessary.
Cut the buns in half and toast them. Cook the burgers in a little oil.
Place fennel on 4 halves of the buns, the hamburgers, fennel, the 4 bread caps and serve with the celery chips.
Serve the sauce on the side.
