Savory waffles with goat cheese
Simple and quick to make, these savory goat cheese waffles will delight the whole table. Enjoy your lunch !
- 250g of flour
- 25 cl of milk
- 120 g goat cheese (fresh or log)
- 50g butter
- 2 eggs
- salt pepper
- waffle iron oil

On a plate, mash the goat cheese with a fork.
Separate the egg whites from the yolks by putting them in two separate containers.
Cut the butter into pieces and melt them in a saucepan over low heat, or in a bowl in the microwave.
In a bowl, put the flour and make a well in the middle.
Pour in the egg yolks one by one, with the melted butter, while mixing with a wooden spoon.
Then gradually pour in the milk, whisking constantly, until a smooth, homogeneous paste is obtained. Use a whisk to beat the batter and remove lumps if needed. Add salt and pepper.
Finally add the crushed goat cheese and mix well.
Whisk the egg whites until stiff. Incorporate them delicately into the preparation, being careful not to break the snow, to have a very frothy batter.

Now turn on your waffle maker and lightly oil it if it is not non-stick.
Using a ladle, pour the batter into the mold, close it and cook for about 5 minutes.
Take out the waffles when they are golden then renew the operation until there is no more dough, making sure to put a little oil in the waffle maker between each waffle.
Serve your savory goat cheese waffles very hot, so that the cheese is melting, even runny.
