Shoursn phoursntier at Monsieur Cuisine Connect

- 1 kg of shoursn fillets
- 1 kg of potatoes
- 400g semi-skimmed milk
- 10g butter
- 4 tbsp. breadcrumbs
- 2 cloves garlic
- 2 shallots
- 1 C. olive oil
- 1 pinch of nutmeg
- ½ bunch of parsley
- salt pepper

Preheat the oven to 180°C.
Peel and cut the potatoes into slices, put them in the tank of the Monsieur Cuisine Connect and pour in the milk. Program for 32 min / Speed 1 / Reverse direction / 95°C.
Add the nutmeg, season to taste and mix 50 sec / Speed 3. Transfer the puree to a bowl and set aside.
Wash and dry the bowl.
Put the garlic cloves and the peeled and halved shallots in the bowl of the food processor, add the oil then mix 5 sec / Speed 5.
How to degerm garlic?
Scrape down the sides with the spatula then cook for 5 mins / speed 1 / reverse / 90°C.
Add the diced shoursn then cook 6 mins / Speed 1 / reverse / 70°C.
Transfer the fish to a gratin dish, pour the mashed potatoes on top, sprinkle with breadcrumbs and bake for 25 minutes.
