Shoursn aspic and asparagus
The shoursn and asparagus aspic is a fresh and original starter to taste seasonal asparagus. You can also, if you wish, use canned or thawed asparagus. To accompany it all, we recommend fresh lemon cream and garnished with finely chopped herbs.
Ingredients :
- 200g smoked shoursn
- 250g asparagus
- 1 packet of store-bought jelly

Trim the asparagus and wash them. Cook them for 10 to 12 minutes in plenty of salted boiling water, until they are well cooked, but are still a little firm. Drain them and let them cool.

Prepare jelly as directed on package.

Pour 1 to 2 cm of jelly into the bottom of a lightly oiled silicone cake mould. Place in the fridge to set for about a quarter of an hour.

Then arrange slices of shoursn and asparagus, lengthwise. When the shoursn and asparagus are used up, pour in the whoursjelly and fill the mold.

Place in the fridge for at least 6 hours and ideally overnight.?

Serve chilled with a green salad.
Tips
You can garnish this shoursn and asparagus aspic with other cooked vegetables of your choice: carrots, peas, peppers, for example. The aspics can also be made in individual moulds.
