Sage fritters
For an original aperitif full of flavors (but also indulgence!), bet on these sage fritters. Surprise and delight guaranteed!

Semi-skimmed milk

Break the egg, taking care to separate the white from the yolk in two different containers.

In a bowl, pour the flour and make a well in the center.

Add the egg yolk and the olive oil.

Mix, then, little by little, pour in the milk without ceasing to stir, at first slowly then more and more vigorously until a smooth and homogeneous paste is obtained. Add salt and pepper.

Cover the bowl with cling film and refrigerate for an hour.

Just before cooking the donuts, whisk the egg white until stiff. Then gently fold it into the mixture, taking care not to “break” the snow, so that the batter has an airy consistency.

Heat the frying oil (such as sunflower oil for example) in a frying pan.

Take a sage leaf (very clean), hold it by the end (the tail) and immerse it entirely in the donut batter to coat it well.

Then drop it into the hot oil.

Do the same with all the sage leaves. Leave to swell and brown, turning the donuts over so that they are golden brown on each side.

Place the donuts as you go on absorbent paper so that they drain.

Serve your sage fritters immediately.
