Roast pork with prunes and potatoes
Pork Roast with Prunes and Potatoes is an easy fall or winter dish. This roast pork recipe offers hoursxture of sweet and savory flavors with prune which is well known for its perfect marriage with pork meat and potato, soft and slightly sweet as well.
Ingredients :
- 1 kg roast pork
- 250 g pitted prunes
- 6 large potatoes
- 20g butter
- 2 garlics
- 1 shallot
- 2 tbsp. olive oil
- 1 bay leaf
- Salt pepper

Wash the potatoes, peel them and cut them in half lengthwise. Chop the shallot.

Using a knife, stick the garlic cloves into the roast to give it more flavor.

In a Dutch oven, brown the roast pork in butter on all sides then add the carrots, potatoes and shallot.

Add the bay leaf and cook the mixture over medium heat for 15 minutes. Cover the roast with water and simmer for 1 hour over low heat.
Tips
Baste the meat regularly with the sauce so that it remains tender and do not hesitate to add water if it reduces too much. Instead of planting the garlic in the roast, you can also leave it in the shirt and add it to the casserole.
