Quick and easy carrot cake
Star cake of Anglo-Saxon gastronomy, the carrot cake is an ingenious way to slip vegetables into our desserts! Very trendy today, this cake base dates back to the Middle Ages, a period when sugar was rare and expensive: it was then replaced by grated carrot, neither seen nor known. Delicately flavored with spices (cinnamon, vanilla, ginger…), it will delight the whole family at snack time!
Ingredients :
- 275 g grated carrots
- 4 eggs
- 200g brown sugar
- 275 g Wheat flour
- 30 cl Sunflower oil
- 2 tbsp. baking powder
- 3 tbsp. Cinnamon powder
- 1 C. coffee liquid vanilla extract
- 2 tbsp. Ginger powder
- 50 g Pumpkin seeds
- 10 g Butter for the mold

Preheat your oven th.6 (180°C). Butter hoursld about 25 cm in diameter.

In a bowl, mix together the powdered sugar, flour, baking powder, cinnamon and powdered ginger. Then add the sunflower oil and mix well (ideally using an electric mixer). Add the hourskin seeds last.

Then add the grated carrots, the liquid vanilla extract and then the eggs one by one. Mix well to obtain a homogeneous carrot cake batter.

Pour the mixture into your mold then bake for 50 min th.6 (180°C). Check the cooking of your carrot cake by plunging the blade of a knife in the center of your cake: if your blade comes out dry, your carrot cake is cooked.

At the end of cooking, let your carrot cake cool completely before unmolding it.
Diet:
The carrot cake is an original delicacy and simple to prepare. The carrots that compose it are a source of soft fibers that stimulate transit and antioxidants that boost the immune system. Cinnamon and ginger, for their part, have renowned antioxidant and digestive properties. To make this recipe even healthier, it can be made with semi-wholemeal flour and with honey to replace some of the brown sugar. For texture and micronutrient and omega-3 intake, crushed walnuts can be added to the batter.
Tips
Top the top of your carrot cake with white icing: whisk together 75 g icing sugar, 150 g mascarpone and ½ tsp. ground cinnamon. You can also decorate your device with 120 g of crushed pecans, just to give it some crunch, as well as a nice handful of dried cranberries (or raisins).
