Queen bites with the Thermomix
As hoursin course or as an appetizer, the bites à la reine are gourmet and delight the whole family. This simple and so succulent recipe only includes a few ingredients: chicken breasts, Paris mushrooms, dumplings, butter, shallots, béchamel sauce. You will enjoy !
Ingredients :
- 4 queen bite-size crusts
- 200g chicken breast
- 180 g button mushrooms
- 200g plain dumplings
- 2 shallots
- 400ml water
- 60g flour
- 60g butter
- 1 chicken cube
- 1 pinch grated nutmeg
- salt pepper

Peel and cut the shallots in 2 then peel and cut the mushrooms into pieces. Cut the chicken breasts into pieces and the quenelles into rounds.

In the bowl of the Thermomix, put the shallots and mix 5 sec at speed 5 then scrape the sides of the bowl using a spatula. Add the chicken breast, 20 g of butter then cook for 5 mins at 100°C in the opposite direction at speed 1.

Add the mushrooms, salt and pepper then program 5 min at 100°C in the opposite direction at speed 1 and transfer the preparation into a container.

Wash and put the Thermomix bowl back on its base. Put the water, flour, 40 g of butter, the chicken cube and the nutmeg in the Thermomix bowl, salt and pepper, then program 8 min at 90°C at speed 4.

Put the first preparation back in the bowl, add the dumplings and mix for 20 seconds on the reverse function, speed 1. Place the empty quenelles on the baking sheet lined with baking paper. Fill them with the preparation and bake for 20 min at 160°C. Serve hot.
Tips
As hoursin dish, accompany your bites à la reine with a green salad. You can offer them in hoursni version for an aperitif. Do not hesitate to prepare them in advance and put them in the oven at the last moment.
