Portuguese soup “caldo verde”
Ingredients :
- 600g potatoes
- 200g onions
- 1 clove of garlic
- 300g kale/borschool
- 15ml olive oil
- salt
- pepper
- 100g chorizo sausage
- 1 liter of chicken broth
- 1 liter of water

Prepare the vegetables: Peel the potatoes and cut them into pieces about 3 cm across; finely chop the onion and garlic; Thoroughly wash and wring the cabbage leaves, then slice them into thin strips (as thin as possible). Cut half the chorizo into small dice and the rest into rounds. To book.

Saute onion and garlic until softened, about 4 min. Add the diced chorizo and the potatoes and cook for 5 minutes, stirring occasionally. Salt and pepper lightly. Add hot broth and water. Bake uncovered until potatoes are tender, about 15 min.

Puree the soup in a blender. Return the soup to the saucepan and heat through. Add the cabbage and cook for 3 to 5 minutes. Check the seasoning, distribute the soup in bowls and distribute the slices of chorizo. To serve.
