Plum tart and pastry cream
Do you have a lot of plums in your garden and you don’t know how to cook them? As a change from jam and plum compote, we offer you a tasty recipe for plum pie with pastry cream. Easy to make, this crispy and melting tart will delight the taste buds of all gourmets at tea time.
Ingredients :
- 1 shortcrust pastry
- -For the pastry cream:
- 50 cl of milk
- 4 egg yolks
- 140g sugar
- 1 sachet of vanilla sugar
- 60g flour
- -For garnish
- 500g plums

Arrange the shortcrust pastry in a pie pan. Prick the bottom with a fork and refrigerate.

Prepare the pastry cream. Pour the milk and vanilla sugar into a saucepan. Heat over medium heat. Meanwhile, whisk the egg yolks with the powdered sugar and flour. Pour a little hot milk over it and put it all back in the saucepan. Heat over medium heat, stirring constantly. When the cream is thick, remove the pan from the heat. Pour into a container and let cool.

Wash the plums, cut them in half and remove their core. Pour the pastry cream on the bottom of the pie and place the plums on top. Bake the pie for 40 minutes (oven preheated to 180°C). When the pie is cooked through, remove it from the oven and let it cool before serving.

Tips
For even more indulgence, you can make your homemade shortcrust pastry. All you need to do is mix 300 g of flour, 150 g of diced butter, 1 pinch of salt, 8 cl of water, 3 tbsp. sugar. Roll out the dough on a floured work surface and line your mold. All that remains is to garnish it!
