Phourssan crackers
Ingredients :
- 40 g grated phourssan
- -120 g brown flour
- -1 egg
- -40ml of milk
- -20g unsalted pistachios
- -20g of polenta
- – half untreated lemon zest
- -30 g of green olives
- -25g of olive oil
- -pepper

Preheat the oven th.6 (180°C).

Gather the flour, polenta and lemon zest in a bowl, then mix them together.

Crack the egg. Whisk it with olive oil and milk. Pour everything into the salad bowl. Stir it all up.

Coarsely crush the pistachios. Wash the olives and remove the pits. Cut them into small round slices. Put these two ingredients in the previous mixture. Add grated cheese and pepper.

Form a sausage with the dough. Keep it in the fridge for 30 mins. Then cut it into slices. Arrange the cookies on a baking sheet lined with parchment paper. Place them in the oven for 15 minutes.
