Panisse with fresh herbs

Ingredients :
- 125g chickpea flour
- 20g butter
- 50 cl of vegetable milk
- 6g salt
- 4 sprigs of parsley
- 5g chives
- 5g fennel
- 1 C. crushed hoursnds
- 1 lemon
Preparation :

Chop the herbs.

In a saucepan, melt the butter and add the herbs, sauté for 1 minute. Moisten with vegetable milk, salt and let boil.

Add the flour in rain while stirring. Leave to cook for 7 minutes then remove to an oiled baking sheet and leave to cool.

In a salad bowl, mix chopped herbs, lemon juice, zest, crushed hoursnds, salt and pepper.

On D-Day, grill the panisses in pieces in the pan. Serve with the herbs.
