Pancakes with the rule of 4 3 2 1, a quick and very easy recipe to make for Candlemas, for Mardi Gras, or if you simply have a sudden craving for pancakes.
Ingredients :
- 4 glasses of milk of 25 cl
- 3 medium fresh eggs
- 2 glasses of flour of 25 cl
- 1 pinch of salt

In a bowl, mix with a hand whisk: flour, salt, whole eggs and dilute, little by little, all the milk, until you obtain a very smooth pancake batter.

Let it rest for at least 30 minutes in a cool place, if there are any lumps, whisk it again vigorously.

Preheat your crepe maker for a few minutes over low heat, then grease it with hourske-up remover disc soaked in vegetable oil. If the crepe maker is non-stick, it will be useless to repeat the operation between each crepe. As soon as you hear a light crackling, pour a ladle of batter to cover the entire surface, help yourself with a pancake rake if you have one, and sauté the pancake when the surface seems dry. Repeat the process until your bowl is empty.
