Pan-fried chocolate fondant
- 50g flour
- 50g cornstarch
- 200g dark baking chocolate
- 100g brown sugar
- 4 eggs
- 150g butter
- 1 pinch of salt
- icing sugar

Melt the chocolate and butter in a saucepan over a bain-marie.
Whisk the eggs with the brown sugar in a bowl.
Add the chocolate-butter mixture then the flour, cornstarch and salt, mixing well until you get a smooth paste.
Melt a knob of butter in a deep frying pan and pour the mixture into it.
Let cook for 15 minutes over low heat.
Remove from the heat and let cool for 2-3 minutes.
Sprinkle with icing sugar, decorate with raspberries or other seasonal fruits.
