Original coconut flour pancakes
For brunch, breakfast or afternoon tea, pancakes are always welcome on our tables. These fluffy little pancakes can be declined in a gluten-free version to please all gourmets. We offer you delicious coconut flour pancakes. Quick and easy to make, they can be enjoyed with honey, maple syrup, jam or simply a knob of butter.
Ingredients :
- 2 eggs
- 60ml coconut milk
- 1 C. powdered sugar
- 3 tbsp. coconut flour
- 1/2 tsp. baking powder
- coconut oil
Preparation :

Pour the eggs and sugar into a bowl and whisk vigorously to obtain a homogeneous mixture.

Add the sifted coconut milk, coconut flour and baking powder. Mix well to obtain a fairly thick homogeneous paste. Leave to rest for 30 mins. at room temperature.

Heat a little coconut oil in a pan. When the pan is hot, pour a small ladle of pancake batter. Cook 3 mins. on the first side then turn the pancake over and continue cooking for a few moments. Place the pancake on a plate and repeat the process until the batter is used up.
Diet:
For those who stick to their figure, you can replace maple syrup and whipped cream with 0% or 20% cottage cheese, cinnamon, lemon juice.
Tips
For even more gourmet pancakes, you can flavor the dough with a sachet of vanilla sugar or the seeds of a vanilla pod. And for chocolate lovers, add 50 g of dark chocolate chips to the pancake batter. You will get small pancakes that are both soft and melting… A delight!
