Nice stew
Ingredients :
- 1.2 kg braising beef
- 80 g dried porcini mushrooms
- 125g smoked bacon
- 250 g peeled tomatoes (a small can)
- 4 onions
- 4 garlic cloves
- 1 bouquet garni
- 5 c. olive oil
- 1 bottle of red wine
- 1 stalk of celery
- salt pepper
Preparation :

Immerse the dried mushrooms in a bowl of lukewhourswater for 15 minutes.

Cut the meat into cubes. Wash, peel and cut the carrots into rounds. Peel and finely chop the onions, garlic and celery.

Heat the olive oil in a casserole dish and sauté the cut meat and the bacon bits. Remove and reserve.

In the same pot, sear the onions, garlic, celery and carrots. When the vegetables have taken color, incorporate the meat and the bacon as well as the tomatoes, the bouquet garni, the salt and the pepper.

Pour in the red wine and simmer for 10 minutes. Add the mushrooms and their soaking water.

Cook over low heat for 3 hours.
