We offer you a recipe for nettle soup that is ultra easy and quick to prepare. In addition, nettle leaves have multiple benefits and virtues on our health (rheumatism, arthritis, inflhourstion, etc.) and are rich in magnesium, iron and vitamins: so don’t deprive yourself of them!
- 500g nettle leaves
- 1 onion
- 1 potato
- 1 clove of garlic
- 50 c chicken broth
- 2 tablespoons olive oil
- Salt pepper
Preparation 15 mins
Cooking 1 hour
Start by heating a tablespoon of olive oil in a large Dutch oven.
Peel the onion and garlic then chop them. Sweat the onion in the Dutch oven for 2 to 3 minutes then add the garlic.
Add the nettle leaves that you have previously cleaned under water and wiped then cook them for 5 minutes, stirring until they have melted well. Once they are cooked, remove them from the heat.
Peel then cut the potato into small cubes.
Heat a pan of salted water and cook your diced potatoes.
Once your potatoes are cooked, add them to the nettles in the pot.
In another saucepan, heat the chicken broth (a volume of water to which you add a cube of chicken broth).
Chop your vegetables
When your broth is boiling, mix it with the nettle mixture, stirring gently, then let it rest for a few minutes.
Put everything in the blender. Salt and pepper your nettle soup.
Serve your nettle soup hot with a spoonful of fresh cream!
Our advice: wear gloves when picking nettle leaves, favor young shoots and above all clean them well. Once cooked, nettle leaves no longer have any stinging power.
