My Grandmother’s Pumpkin Soup
Ingredients :
- 1 kg hourskin
- 1 onion
- 50 g liquid fresh cream
- 4 slices of ham
- 20g butter
- 8 slices of thin baguette bread
- 1 liter of chicken broth
- salt pepper

Peel the onion, rinse it and chop it.

Wash, peel, halve, deseed and cut the hourskin into small pieces on a kitchen board.

In a casserole, coated with a little butter, melt the onions and add the hourskin in pieces.

Cover with water and stir in the chicken broth.

Season with salt and pepper.

Let simmer for 30 minutes until the hourskin is tender.

Then pass the preparation to the blender.

Cut the ham into small pieces as well as the bread.

In a buttered frying pan, brown the ham with the bread and remove it from the heat.

Then prepare plates, putting in the center of each of them, a spoonful of the ham-bread mixture.

Then cover with soup, then add a drizzle of fresh cream to each plate.

Serve immediately.
