Mini goat burger aperitif
Ingredients :
- For the mini buns:
- 250g of flour
- 1 C. sugar
- 1 C. salt
- 120 g lukewhoursmilk
- 2 tbsp. coffee beans baker’s yeast
- 50g melted butter
- 1 egg
- 1 egg yolk for gilding
- 1 C. seeds (poppy, sesame, etc.)
- flower of salt
- For garnish :
- 400g minced meat
- 2 x 200 g logs of Soignon Sainte Maure goat cheese
- 1 handful of baby spinach
- 1/2 zucchini (or 2 large Russian pickles)
- 2 tomatoes
- 6 slices of smoked bacon
- ketchup
- 20g butter
- salt pepper

Prepare the mini buns. Pour the milk into a bowl and dissolve the yeast in it. Add the butter and the beaten egg. In a stand mixer, combine the flour, sugar and salt. Add the liquid preparation to the robot and knead for 5 minutes.

Cover with cling film and let the dough rise in a whoursplace for 1 hour 30 minutes (the dough should double in volume).

On a floured work surface, fold the dough to expel the air and divide it into 16 small pieces. Fold over each piece of dough, bringing the edges towards the centre. Form balls and place them on a baking sheet lined with parchment paper. Flatten the balls with the phoursof your hand. Cover with a towel and let rise another 30 minutes.

Preheat the oven to 200°C. Using a pastry brush, brush the balls with the egg yolk diluted in a little water. Sprinkle with fleur de sel and seeds and bake for 10 minutes.

Prepare the steaks. Form 16 small balls of meat and flatten them. In a frying pan, lather the butter over high heat and cook the steaks for 30 seconds on each side. Salt and pepper and place a slice of goat cheese on each small steak.

In the pan, grill the slices of bacon and cut them into 3.

To assemble the mini-burgers, cut the buns in half and spread ketchup on both sides. Garnish the bases with baby spinach, add the steak and its slice of goat cheese log, a slice of tomato, a piece of bacon and finish with a thin slice of zucchini. Cover with hats and hold with a pick.
