Mexican Guacamole
Guacamole is part of traditional Mexican cuisine, and it is listed as a UNESCO Intangible World Heritage Site. Tempers sometimes flare over its actual composition. In my opinion, the simplest and classic recipe is made with avocado, onion, tomato, coriander, lemon, then it’s up to everyone’s taste and you can add something else.
Ingredients :
- 3 ripe avocados
- 1 onion
- 2 tbsp. tablespoons lime juice (or lemon)
- 3 tbsp. tablespoons chopped cilantro
- 1 C. garlic powder
- 1/2 tsp. celery salt
- 1/2 tsp. cayenne pepper
- 1 C. paprika
- 2 tomatoes
- A few drops of Tabasco
- Salt
- Pepper

Peel and pit the avocados, then chop them finely.

In a bowl, mash the flesh using a potato masher or the back of a fork.

Be careful not to make mush with your avocados, it’s still more pleasant if there are a few small pieces left.

Finely chop your onion and add it to the mashed avocado.

Stir in your lemon juice, chopped cilantro, garlic, celery salt, cayenne pepper and paprika.

Mix well and finish the seasoning according to your taste with salt and pepper.

Tips
For a lighter and more original aperitif, serve your guacamole with raw vegetables cut into sticks or small florets. Think carrots, celery, cauliflower, radishes or baby corn. Guacamole is a preparation that does not keep for the long term. However, the best trick would be to slip the pit of your avocado into the preparation to prevent its oxidation.
