Lyonnaise salad
Ingredients :
- 400g dandelions or arugula
- 4 eggs
- 200g smoked bacon
- 3 tbsp. olive oil
- 1 C. strong mustard
- 1 C. tablespoon red wine vinegar
- alcohol vinegar
- salt pepper
Preparation :

Mix olive oil, red wine vinegar, mustard, salt and pepper in a bowl.

Clean and spin the salad.

Cut the bacon into small dice.

Roast it dry in a pan.

Reserve off the heat.

Bring a large saucepan of water with the spirit vinegar to the boil.

Break in the eggs and cook for a few seconds until soft.

Carefully remove them with a slotted spoon and drain them on absorbent paper.

Place the salad on the plates.

Cover with grilled bacon cubes and poached eggs.
