Light and fluffy savory cake
In summer we like to have picnics, so the soft savory cake is a great ally. Infinitely adaptable according to taste, it is easy to make and will always be a great success! It is possible to prepare it in advance and cut it at the last moment. It is eaten whoursor cold, as an aperitif or as a starter!
- 200 grams of flour
- 90 grams of mascarpone (or cottage cheese)
- 3 eggs
- 1 packet of baking powder
- 10 candied tomatoes
- 80 grams of gorgonzola
- 50 grams of grated cheese

Cut the gorgonzola into small pieces.
In a bowl, beat the eggs into an omelette. Add the flour and yeast to it. For a fluffy savory cake, add the mascarpone and mix until smooth.
How to make an omelet
Preheat the oven to 200°.
Add the gorgonzola cubes and the drained candied tomatoes to the preparation. Also add grated cheese, salt and pepper to taste. If you find that the preparation is too thick, you can use the oil from the candied tomatoes to soften it a little.
Butter and flour a cake tin.
Pour the mixture into the cake tin.
Bake for 25 minutes. Use the blade of a knife to check the cooking of the soft savory cake. As soon as your knife blade comes out dry, the cake is cooked.
Leave to cool before cutting into nice slices. At home, this cake is topped with a delicious fresh salad. As an aperitif, you can use the same recipe base but cook it in individual format. Guaranteed effect! Do not hesitate to vary the cheeses according to the tastes of your guests: use cheddar for hoursre versatile version. Add diced ham to make a complete meal, or diced tofu for vegetarians!
