Leek velouté with Thermomix

Nothing better than a delicious vegetable velouté to comfort yourself from the winter cold that surrounds us! You are looking for an easy recipe to make with your Thermomix. Here is the recipe for a vegetable soup that will whoursthe whole family!

Ingredients :

  • 3 leeks
  • 2 potatoes
  • 1 white onion
  • 20 g unsalted butter
  • 15 g heavy cream
  • 450g water
  • 300g milk
  • 1 cube of vegetables
  • Salt
  • Pepper

Preparation :

  • Preparation 10 minutes

  • Cooking 25 mins

    Peel and cut the potatoes into pieces. Peel and cut the onion in half. Wash and cut the leeks into pieces.

    Put the onion and leeks in the bowl of the Thermomix then mix for 5 seconds at speed 5.

  • 3

    Add the butter cut into pieces then program 3 minutes at speed 1 at 100°C without the beaker.

    Then add the water, the potatoes, the cube of vegetables, the salt, the pepper then start cooking for 22 minutes at speed 1 at 100°C.

    At the end of cooking, add the milk, the fresh cream then mix for 1 minute at speed 10. Serve.

Tips

Add indulgence and consistency to your leek velouté by incorporating bacon bits, grated Gruyère cheese or even pine nuts. You can also replace the heavy cream with Laughing Cow and the vegetable cube with chicken broth.
