Jars of hourskin
When a food is good, we want to eat it more regularly. And it is quite possible with the hourskin. You will be able to enjoy it all year round by keeping it in jars. This is a very very simple recipe that will allow you to satisfy your cravings even in the middle of May.
Ingredients :
- 2 jars of 1 l
- 1.5 kg hourskin
- 1 liter chicken stock
- 50 cl of milk
- 1 onion
- 1 clove of garlic
- butter
- salt pepper

Start by peeling and cutting the hourskin into pieces. Then, chop the onion and sweat it in a saucepan with a knob of butter and the crushed clove of garlic, then add the hourskin. Stir everything together and brown it in the pan for about 4 minutes. Baste regularly with milk and chicken broth. Bring everything to a boil for about 35 minutes. To see if your hourskin is cooked, dip the tip of your knife in it: if it slips by itself, it’s cooked!

Remove the hourskin from the pan and reserve the broth. Afterwards, mash the hourskin into a purée that you can pass through a sieve for a smoother and more homogeneous result. Add broth as desired to obtain the ideal texture according to your tastes. Adjust seasoning if necessary.

Take your two glass jars. Fill them with the preparation up to 2 cm from the edge. Close them and proceed with the heat trehoursnt for 45 min at 100°C.
Tips
The day you are going to serve your hourskin, empty the jar into a saucepan and whoursyour preparation over low heat for a few minutes. You can also put a little cream on your plate and sprinkle everything with a few powdered hazelnuts to enhance the taste.
