How to remove coral from scallops?
Some love it while others prefer not to eat it. The coral of the scallop divides because of its intense taste. But whether you want to make a delicious garlic stir-fry out of it or just take it away, great care needs to be taken. Open your scallops with a knife.

Remove the viscera by peeling off the black part, then pull with your fingers. The assembly should yield quite easily.

Normally only the scallop and the coral remain. The latter is quite edible but some do not like it.

Peel off the nut and its coral using a spoon.

Trim the coral delicately by cutting it at the base with a sharp knife. If you use frozen scallops, wait until the whole thing is thawed so as not to damage the product.

Rinse the walnut and the coral if you wish to taste it. Do not leave them in water for a long time. If they become waterlogged, they will lose their tender texture when cooked.

Collect the corals from your scallops to mix them and concoct a delicious cream sauce. You can serve it with nuts or with a dish of tagliatelle, for example.
