Hot chocolate with orange and spices (vegan option)

Ingredients :
- 2 cups milk of your choice (soy for me)
- the zest of an organic or untreated orange
- 60g dark pastry chocolate
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground cardamom
- 2 pinches ground nutmeg
- single cream or canned coconut milk (optional)

Optional: for a gourmet version, prepare whipped cream. Put a brick of whole liquid cream or a can of coconut milk in the fridge a few times beforehand. A few minutes before whipping, also add the whisks and a stainless steel or glass bowl. For a coconut whipped cream, whip a little of the solid part. When your whipped cream, whatever it is, is firm enough, reserve the salad bowl in the fridge.

To prevent the milk from sticking, rinse your pan with water without drying it. Pour the milk into a saucepan with the spices and orange zest and bring to the boil while stirring. At the first bubbles, lower the heat to medium, pour the chocolate cut into pieces and let melt while continuing to stir. Pour into mugs, straining with a sieve or a fine-mesh strainer. Add the garnish of your choice or enjoy as it is hot!

Add the whipped cream or coconut whipped cream if you have prepared one, with a piping bag or a freezer bag with a corner cut off. Garnish with a little extra zest and spices if desired. All you have to do is enjoy by mixing everything together or by plunging your spoon into the cream!
