Homemade tomato, feta and basil muffins
- 2 eggs
- 180g flour
- 1 packet of baking powder
- 40 g candied tomatoes
- 40g feta
- 1 sprig of basil
- 15 cl of milk
- 4 cl of olive oil
- salt pepper
Preparation 10 minutes
Cooking 15 mins
Rest 5 minutes
Preheat your oven to 200°C (th 6-7).
On a kitchen board, cut the candied tomatoes into small pieces, then break up the feta into cubes.

Wash and chop the basil.

Break the eggs into a bowl, whisk them, adding the milk, 2 pinches of salt, 1 pinch of pepper and the olive oil.
Then add in turn, the flour, the baking powder, the tomato pieces, the cubes of feta and the chopped basil.
Avoid overworking your dough, then divide it into muffin molds while filling them to 3/4.
Bake for 15 mins.
After cooking, let them cool for 5 minutes then unmold them.
