Ham and chive omelet
Ingredients :
- 8 eggs
- 200g ham
- 1/2 tsp. tsp nutmeg (grated)
- 4 pinches cayenne pepper
- 2 tbsp. chives (chopped)
- salt pepper

Cut the ham into sticks, break the eggs into a bowl, beat them into an omelette with a little salt and pepper.

Heat the oil in a non-stick pan.

Brown the ham for 2 minutes. while stirring with a wooden spoon, add nutmeg, chilli, chives, mix for 30 seconds.

Pour the beaten eggs over the ham, mix lightly, let set without browning, turn over to cook the other side.

Let cool and serve.
