Haddock fish and chips
Ingredients :
- 100g haddock
- 2 hoursnd potatoes
- 1 lemon
- 4 eggs
- 1 bunch of basil
- 5 cl of balsamic vinegar
- 3g Espelette pepper
- PM salt
- PM Pepper

Unroll the potatoes in the pasthourschine to obtain a sort of spaghetti then blanch them in cold water. Take them out when they come to a boil. Pass them through Chinese.

Cut the haddock into cubes and let them marinate for 15 minutes in the lemon juice. Then wrap them in basil leaves. Wrap this basil haddock in the potato spaghetti until you get 10 nice big balls. Fry these balls for 3 min at (120°) then sprinkle over the grated lemon and the Espelette pepper.

The sauce: immerse the eggs for 5 minutes in boiling salted water then cool them quickly so that they remain soft. Then mix them with the vinegar, salt and pepper.

Pour the sauce into the bottom of the spoon then the ball on top. Garnish with a few basil heads.
