Green peppercorn steak
Ingredients :
- 4 beef steaks
- 120 g fresh cream
- 5 cl of dry white wine
- 1 C. green pepper juice
- 1 C. green pepper
- 40g butter
- salt pepper

Cook the steaks in butter on both sides, season with salt and pepper, keep them rare and remove them from the pan.

Discard the cooking butter, deglaze with white wine while stirring; reduce over high heat. Add the crème fraîche and the pepper juice and the green pepper; reduce until thickened. Coat the steaks with the sauce and serve immediately.
