Grated coconut cake
Do you want hoursist and tasty cake ready in minutes, without egg whites or tedious icing? Tired of yoghurt cake or chocolate fondant? Prepared in two turns of a teaspoon, this coconut cake is just waiting to do you a favor, so on your marks, get set, bake!
Ingredients :
- 125 g grated coconut
- 3 eggs
- 25 cl of milk
- 180g flour
- 120g caster sugar
- 4 cl of oil
- 1 packet of baking powder
- 1 sachet of vanilla sugar
- 1 pinch of salt

While your oven preheats th.5/6 (170°C), prepare the “mixture” (the dough) for the cake in a bowl: mix in the powdered sugar, vanilla sugar, salt, eggs, milk, flour, oil, baking powder and coconut until smooth.

Pour everything into a round mould, like a cake mould, (if it’s not silicone, grease it with melted butter) then bake for about 45 minutes in the oven, until the blade of a knife barely moist from your cake.

Serve the cake whoursor cooled, why not with a red fruit coulis, chocolate mousse or salted butter caramel sauce.
Tips
If you want to flavor your coconut cake more, add the zest and juice of a lemon to it. And if you want it to be even softer, replace the milk with yogurt, ricotta or heavy cream.
