Gluten Free Strawberry Shortcake

Preheat your oven to 210°C (th.7). Wash, hull and cut the strawberries into pieces. Put them in a bowl with 50 ml of sugar, mix and set aside. In a small bowl, beat the eggs.

In another bowl, pour the flour mix, the remaining sugar and the soft butter cut into pieces. Mix then pour in the milk, beaten eggs and vanilla, and mix again to obtain a paste.

Place a silicone baking sheet or parchment paper on your baking sheet. Place your dough on it, divided into 6 different piles on the plate. Put in the oven for 10 to 12 minutes, until the shortcakes are a little golden. Take them out of the oven and let them cool.

Take a sharp knife and cut your shortcakes horizontally. In a very cold bowl, put the very cold liquid cream too, and beat it until you get a whipped cream. Fill half of the shortcakes with whipped cream, add strawberries and put the other half on top. Chill a bit before eating!
Tips
You can vary the pleasures by replacing the strawberries with other fruits, such as raspberries for example, to enjoy this gluten-free recipe in several forms!
