Drain the artichoke bottoms, cut them into quarters.

Drizzle with oil and lemon juice, salt and pepper. Sprinkle with parsley.

Leave to macerate for 1 hour. On the other hand, prepare the dough: mix the flour with the egg yolk and the salt.

Gradually add the beer (more or less) so as to have a smooth batter, a little thicker than pancake batter. Let stand for 1 hour as well.

When it’s time to eat, add the beaten egg white to the batter.
