Forest sauce with Thermomix
The forest sauce is a creamy sauce made from mushrooms, which ideally accompanies white or red meats, but also pasta and rice. This forest sauce recipe with the Thermomix is very easy to follow and make with the Thermomix. Follow the steps and let your robot monitor the cooking of the mushroom sauce.
- 300g sliced button mushrooms
- 250g full cream
- 1 chicken stock cube
- 10 cl of white wine
- 3 shallots
- 2 cloves garlic
- 40g butter

Peel the shallots and garlic cloves and pour them into the bowl of the Thermomix. Mix 5 sec, speed 5. Scrape the sides of the bowl with the spatula.
Add 20 g of butter, then sauté 3 min, 100°C, speed 2.
Put the whisk in the bowl of the Thermomix robot. Pour the mushrooms. Add the remaining butter. Fry for 14 min at 120°C, in the opposite direction, speed 0.5, taking care to remove the measuring beaker from the lid.
Dilute the stock cube in the white wine and pour this mixture into the bowl of the Thermomix. Simmer 5 min, 90°C, reverse, speed 1.
Remove the whip. Add the cream. Simmer and reduce for 15 minutes, in the opposite direction, at 90°C, speed 2. Serve the sauce hot.
For a thicker Thermomix forest sauce, add 1 tbsp. starch (like Maïzena®) at the same time as the cream. Vary the taste and strength of the sauce, using hoursxture of mushrooms with porcini mushrooms.
