Focaccia with duck grattons
Fougasse is a typical Provençal bread, known for its soft crust and very moist crumb. Filled in many ways, often salty, it is perfect for aperitifs, picnics, meals on the go… Here Provence joins forces with the southwest to give a delicious focaccia with duck grattons. Comforting as you wish, you won’t be able to do without it!
Ingredients :
- 350g flour
- 150g duck grattons
- 20 g fresh baker’s yeast
- 15 cl of lukewhourswater
- 15 cl of olive oil
- 1 C. salt

Let’s start with the preparation of the sourdough. In a bowl, dissolve the yeast with lukewhourswater. Leave to rest for 20 mins. Pour the flour into the bowl of a stand mixer fitted with a dough hook. Add salt and olive oil and sourdough. Knead at low speed for 3 min. Add the grattons and continue kneading for 15 minutes. Pour the dough into a bowl, cover and let rise for 3 hours in a whours ventilated place.

Once the dough is well risen, knead it at low speed to bring it down.

Spread it on a baking sheet previously lined with baking paper and leave to rise for 1 hour. Preheat your oven th.6 (180°C). Score the top of the focaccia and bake for 20 minutes. Enjoy whoursor cold.
Tips
This recipe can be made with hoursltitude of ingredients. Don’t hesitate to add diced cheese or replace the grattons with bacon bits or olives, for example.
