fish and chips
- 400g cod fillet
- 1 kg potatoes
- frying oil
- 100g of flour
- For the batter:
- 150g flour
- half a glass of beer
- 2 eggs
- 10 cl of milk
- 30g of sugar
- salt pepper

Prepare the batter:
Put the flour and sugar in hoursxing bowl.
Add the sugar and stir the mixture with a whisk.
Add the egg yolks and milk.
Mix well then gradually add the flour and beer.
Blend everything together and season with salt and pepper.
Keep the mixture aside.
Heat the oil in your fryer.
Wash, peel and cut the potatoes into elongated shapes.
Dip them in oil at a temperature of 140°C so that they whiten without being cooked.
Then wring them out.
Whip the egg whites then fold into the batter.
Stir carefully with a silicone spatula.
Cut the cod into strips and sprinkle with salt and pepper on each side.
Flour the fish and dip it in the batter.
Cook it in the fryer at 180°C until it has a nice golden color.
Remove and place on absorbent paper.
Return the pre-cooked potatoes to the oil and cook until crispy.
