Filet of beef in a foie gras crust

- 500g puff pastry
- 10 cl of Madeira
- 1 egg yolk
- 50g butter
- 50g flour
- 40 cl chicken broth

Split the beef tenderloin in 2 without separating the 2 halves. Introduce slices of foie gras into the slit then close the fillet and tie it. Heat the goose fat in a casserole dish and brown the fillet on all sides. When it is colored, remove it and let it cool.
